All too rarely these days you encounter a professional who you immediately like and know is going to provide an excellent service. This description applies abundantly to Chef Rafael. We recently engaged him to provide a menu and subsequently cook a meal for a very special anniversary and family reunion and I can only say that what Rafael and Alex provided to us was exceptional. From the moment we first met we felt relaxed and confident that we were about to enjoy a culinary experience and this proved to be the case. Space doesn’t allow a detailed description of every dish we experienced but they were all exquisite. Of special mention, the sauce which accompanied the scallops was delicious and the belly pork was delightfully tender. The Herefordshire fillet steak served by Rafael really melted in the mouth and was accompanied by tender broccoli cooked with a hint of chilli. There aren’t many brassica dishes which receive accolades from 9-year olds but that was certainly the case on this occasion! Finally there are few young Chefs with the confidence to permit a group of aspirational amateur cooks to observe them assembling complex deserts but this wasn’t any challenge for Chef Rafael who did so to verbal applause from our guests. The quality of the deserts was aptly summed up by our grand-daughter - “Amazing”. She wasn’t wrong! To accomplish all this in an unfamiliar kitchen takes some skill and to then leave the kitchen in an immaculate condition was, we all felt, extraordinarily praiseworthy. We cannot recommend Chef Rafael and Alex highly enough - indeed some of our group plan to ask him to cater for them on a future occasion provided that by then he isn’t so fully booked up as to be unavailable. My personal prediction is that it won’t be too long before this is the case for this talented young Chef. Well done Rafael and Alex and a million thanks for creating such a memorable occasion for my wife and I and our guests.
